For most sports I prefer a lightly overcast sky, but not for golf. I like lots of sun to give the grass and trees a nice glow. I always say that golf is the only sport where you’re almost guaranteed a great background in your image. For this reason I tend to leave more background in the image since it really enhances to the photo. You don’t even need a really fast shutter speed. Just watch your exposure because the dark backgrounds will tend to overexpose your skin tones. And watch out for the golf balls.
